In the world of chemistry, molecules come in two different shapes: ones that dissolve in water and ones that dissolve an oil. Chemists like to say “hydrophilic” or water-loving and a “lipophilic” for fat loving. In the body, bio-chemicals and nutrients also come in two shapes. The important point is hydrophilic molecules have different characteristics than lipophilic substances.

That means to leverage the nutritional power of these two different classes of molecules, we need to understand how the body responds to each. The superstar water-solubles, (vitamin C and the B complex) helped with quick acting reactions, like protection from stressors, particularly the Sun, and sugar. They play an important role in the health of the skin, brain and nervous system. The B’s are also important for helping the body get energy from foods.

The water soluble minerals, called electrolytes, also play a key role in the health of the nervous system and help the body handle stress. Unlike fatty molecules, the water solubles are eliminated from the body quickly. Thus they need to be replaced throughout the day. Drinking fresh juices, soups, enjoying whole fruits and veggies are good ways to keep hydrophilic molecules replenished. Fish and meat don’t really have a lot of vitamin C in them, but they contain the others. Using nutritional powders that you can add to water is a great way to top off your water-soluble nutritional tank.
