Button Mushrooms 2 cups
Lemon juice 1 Tbsp
Minced Garlic 2 tbsp
Red Onion Sliced One Cup
Baby Kale One Cup
Basmati Rice 160 gms
Vegetable Broth 2 Cups
Olive Oil 2 tbsp
Butter 15 gms
Pepper powder pinch
Salt to taste
Roasted Flaked Almond 2 tbsp for Garnish

Method:
Heat oil , Add garlic .Once browned put onions and fry .Add the mushrooms, salt and pepper.Once water leaves the mushrooms ,transfer to another bowl. Then to the same pan , add butter then rice .Once slighlty sauteed, add lime juice ,put back mushrooms and chopped kale .Add lemon juice and stock. Cover and cook for 10 minutes.
Once Rice is done , garnish with almond flakes.
