Koottu Curry is a traditional side dish served mostly for festivals & celebrations in Kerala, like Onam, Vishu, and marriages. The word kootu means ‘a mix or combination’, and the recipe is a mix of different vegetables and lentil.

Perfectly cooked vegetables and dal with spices along with roasted coconut will bring a feast to your taste buds and you will fall love with this curry. Pepper balances and aids in proper digestion. Roasted coconut enhances the flavor giving a nice aroma and fragrance to the curry.
For Koottucurry, you can use different vegetables. today I am going to make koottucurry with plantain and ash gourd/wintermelon. Cut the plantain into cubes and cook with 3/4 cup of chana dal, 1/2 tsp salt, 1 tsp turmeric powder, 1.5 tsp black pepper powder, 3/4 tsp red chilly powder. You can cook this on stove top or use pressure cooker or instant pot. Make sure you don’t overcook the dal & plantain.
Add 1 cup of cubed winter melon/Ashgourd to the cooked mix, mix well, cover it and cook for another 5 minutes. Grind 1/4 to 1/2 cup coconut with greenchillies (1 to 2) with very little water and add that to the cooked curry mix. Mix well. For seasoning heat 2 tbsp coconut oil, add mustard seeds, let it splutter, add red chillies, 1/4-1/2 cup coconut, curry leaves. Keep stirring until the coconut turns golden brown. Add the seasoning to the curry. add salt if needed. Add 1/2 tsp of jaggery powder or brown sugar and mix well. Serve hot with steamed rice or have it as a snack with your tea. You will love the taste of this curry with a balanced taste. koottu curry is very nutritious and this itself is a wholesome meal. the dal offers proteins, vegetables lends vitamins and minerals and rice its carbs.
