Foods to Boost Immunity 🌸

Due to current global situation, we all need to stay healthy and of course also stay home to save and keep life and livelihood.
So, I would like to share some recipes of healthy food for positive energy to boost our immunity.

~ Braised Beancurd ~

Beancurd is a good source of protein and contains no cholesterol and is an excellent source of iron and calcium as well.

Braised Beancurd Ingredients:
• Carrot: 1 piece
• Potato: 3 pieces
• Beancurd: Half big piece (or, arounds 200-300 grams)
• Green onion: 2 small pieces

Braised Sauce Ingredients:
• Soy Sauce: 3-4 table spoons
• Cooking wine: 1-2 table spoons (can be replaced with cooking sake)
• Red Pepper Flake: 1 table spoons
• Sugar: ½ table spoon
• Red Pepper Paste: ½ table spoon
• Ground Black Pepper: sufficient amount
• Sesame Oil: 1 table spoon
• Garlic Paste: 1 ½ tea spoons
• Mirin: 1 table spoon

~ Stir Fry Broccoli ~

Broccoli is a great source of vitamins K and C, a good source of folate (folic acid) and also provides potassium, & fiber. Broccoli is good food to boost our immunity.

Ingredients:
• Broccoli: half piece
• Red capsicum: 1 piece
• Garlic: 3-4 cloves
• Ground Black Pepper: sufficient amount
• Salt: sufficient amount
• Vegetarian Oyster Sauce: 1-2 table spoons

~ Cucumber Side Dish ~

Cucumbers are low in calories but high in water and several important vitamins and minerals. Eating cucumbers with the peel provides the maximum amount of nutrients.

Ingredients:
• Cucumber: half piece
• Ground Black Pepper: sufficient amount
• Soy Sauce: 1 tea spoon
• Sesame Oil: 1 tea spoon
• Red Pepper Flake: 1 tea spoon
• Sugar: 1 tea spoon

~ Japanese Miso Seaweed Soup ~

Seaweed is the best dietary source of iodine, which helps support your thyroid gland. It also contains other vitamins and minerals, such as vitamin K, B vitamins, zinc and iron, along with antioxidants that help protect your cells from damage.

I bought an instant package of Japanese Miso Seaweed Soup, so I will use it this time.

~ Mixed Black Rice ~

Anthocyanin is a pigment that is responsible for the black-purple colour of black rice. It has also been found to have potent anti-inflammatory, antioxidant, and anticancer effects.

Rice Proportion:
• White Rice: 3 cups
• Black Rice: ¼ cup
