Multi-Vitamin/Mineral Salad with Basil Dressing Recipe

Dressing
Olive Oil – 4 tbsp.
Lemon Juice – 4 tbsp.
Salt and Black Pepper to taste
Basil Leaves – chopped 1 tbsp.

Mix all together and shake well

Salad

Romaine Lettuce – 2 cups
Watercress – 1 cup
Cucumber (half of a long cucumber) – chopped
Red Onion (medium 1) – 1 whole, diced
Avocado – 1 whole, skinned and cut
Tomatoes – 1 cup diced
Mushrooms – 1 cup sliced (lightly fried in butter or vegan butter with salt and pepper)
Vegan Sausage – 1 sliced, toasted or fried. OR, use chickpeas, eggs or chicken for protein
Hemp Hearts – 2 tbsp.
Fried Onion – 1 tsp.
Fried Garlic – 1 tsp.
Nutritional Yeast – 2 tsp.
