QUARANTINE MEALS (VEGAN) – foods that build the immune system

BREAKFAST
Green Smoothie
1 green apple
half lemon, juiced
half lime, juiced
few sprigs of cilantro
handful fresh spinach
1 ginger finger
1/2 cup frozen pineapple
1/4 cup frozen avocado
water to dilute

SNACK
Grapefruit
Immunity tea

LUNCH
Cipes Superfood Salad

DINNER
Coconut Ginger Veggie Soup

Ingredients:
1 white onion, chopped
4-5 garlic cloves, chopped
any mild pepper, chopped
1 sweet potato, chopped
1 bunch Lacinato kale, chopped and stemmed
crimini mushrooms, sliced (I used about 6)
2 tbsp ginger, shredded
1 tbsp coconut oil
1 tbsp vegan butter
1 tbsp cumin powder
1/2 tbsp turmeric powder
1 tsp pepper
5 cups water
1 tbsp veggie bouillon
1 cup buttery beans
1 can full fat coconut milk

Recipe:
heat oil and butter in soup pot
add onion and cook for 5 minutes, until golden around edges
add ginger and peppers
add spices and saute for a few minutes
add garlic, cook for a minute
add sweet potatoes, allowing them to heat for a few minutes
add water + veggie bouillon
add buttery beans, coconut milk
increase heat to boil, then lower to a simmer and cover with lid
let cook anywhere from 15-30 minutes (I like it to cook longer to break down all of the flavors)
5 minutes before done cooking, add in kale and mushrooms
top with black sesame seeds, fresh coconut milk, lime juice!
