Summertime melons like cantaloupe and honeydew are full of vitamins A and C and purple cabbage is loaded with antioxidants. Mix them together and you get a fresh mixture of tastes that’s great for a side dish. Make sure you put the dressing on right before you serve it so the melons don’t release too much of their juices. This recipe can be made with either honeydew or cantaloupe….or both.
1/2 cantaloupe or honeydew cut into 1.2-inch pieces or balled
1/4 red cabbage, shredded
1/2 cup raisins
1/2 bunch cilantro, chopped
1/2 cup olive oil
1 tablespoon white or rice vinegar
juice of 1 lemon
salt and pepper
1 clove garlic (optional)
Mix the first four ingredients together in a large bowl. Take the dressing ingredients (the liquids) and place into a jar and shake. Pour the dressing over the salad ingredients and toss right before serving so the melons will not become mushy.
