ZERO WASTAGE KITCHEN TIPS

OPTIMUM USE

1) Garlic –
a) is best used, crushed under your palm to open the knob.
b) keep the skins ON.
c) crush the cloves lightly by a spatula to release juice.

This cuts down on food waste and has health benefits as well. A lot of vitamin A and C in there alongside anti-inflammatory phenylpropanoid anti-oxidants. Cook whole with ( skin ) to get a lot of flavour out.

2) Lemons –
a) freeze them.
b) grind them full, skin to seed.
c) 1lemon grind makes 2glasses of lime water. Grind 6 or more to freeze and store in an ice tray. Use a cube as per taste in curries, juices, salads and soups.

Lemon peels contain a list of vitamin, mineral and fibre like calcium, potassium and vitamin C which gives your body a nutritional boost.
Lemon seeds help to relieve pain, improve immune system, treat urinary tract infection, eliminate thread worm. Though a little bit bitter, it has detoxifying property.

3) Green chillies –

a) tasty and healthy.
b) absolutely “0” calories, rich in vitamin C and beta carotene and a natural source of iron.
c) make sure to store in a dark, cool area. Exposure to heat, light and air risks loosing their vitamin C.

What do you do with old, left-over dried up green chillies ? DON’T THROW ! Instead GRIND THEM and you have your home made green chilly powder. Store alongside other dry spices. No wastage and do purist cooking.
