Hi, I’m Susan Bowerman, registered dietitian, and today we’re talking about parsley because it’s an herb that often gets ignored. Many people just see parsley as decoration, but don’t realize it’s high in flavor and nutrition.
Parsley is high in vitamins A, C, and K, and also has folate and iron. Now that you know the nutritional benefits, be sure to add parsley to salads, soups, sauces, salsas, and cooked veggies. Minced parsley adds visual interest and flavor when it’s sprinkled on finished dishes.
