Immunity Boosting Food – Beef Stir Fry using Vitamin C Rich Red Bell Peppers and Zinc Rich Beef

With the stresses in current times, I was thinking about foods that help boost immunity.
I believe Vitamin C and Zinc help boost one’s immunity.
For this dish, I used beef chuck underblade. A 3.5 ounce serving has about 70% to 75% (Adult Male) of the US RDA for zinc while a 3.5 ounces of red bell peppers has over 100% of the US RDA for Vitamin C. In fact a 1/4 of a red bell pepper, about 50 grams, has as much Vitamin C as an orange.
Note: 100 grams of red bell pepper chopped is about 3/4 Cup.
