High end chefs use microgreens to garnish soup and sand-witches due to subtle but bold flavours.
There were not many studies to confirm the nutrient of microgreens. However, now scholars are verifying the nutrient value and we have published scientific papers for it.

Scientists have found microgreens are high in vitamin content, including carotenoids, ascorbic acid, antioxidants, phenolic compound content, anti-inflammatory and chlorophyll.
A study has been performed where nutrients value of microgreens have been measured between farm based and commercial microgreen and researchers have found the microgreens grown in farm soil has much higher nutrients than in commercial setup.
Chlorophyll – One of the most important content found in plants, which human can’t produce.
Researcher have found that chlorophyll content has been highest when grown in soil rather than hydroponically.
Higher Chlorophyll makes the microgreens sweeter as they produce more glucose during photosynthesis.
Chlorophyll is called cancer preventive agents as they stimulate immune system.
