Lesson on Vitamin C (Ascorbic acid), metabolic pathways that require vitamin C, dietary sources of vitamin C, and the physiology of absorption and metabolism of vitamin C. Vitamin C is an essential water-soluble vitamin that is required for several different biological pathways. Because it is essential, we have to get vitamin C from our diet. Vitamin C is important as a reducing agent and cofactor for several enzymes in biological pathways including collagen synthesis pathways. In the event of vitamin C deficiency, the condition known as Scurvy can occur and cause a wide range of signs and symptoms. Vitamin C is absorbed through our gastrointestinal system and metabolized and eliminated via several processes.
