Nutrition Series: Pineapple Salsa

University of Utah Health’s Registered Dietitians handpicked this recipe that’s healthy, easy to make, and a perfect complement to this year’s virtual Sundance Film Festival.

Pineapple salsa is a fun, colorful way to add variety to a chips-and-salsa snack or to a fish-taco meal. In this recipe, pineapple is chopped and mixed with red peppers, onion, cilantro and lime for a fresh take on traditional salsa. Feel free to substitute green peppers for red, or use mint in place of cilantro to suit your taste and creativity. This salsa is a great source of Vitamin C, fiber and beneficial phytochemicals and antioxidants because of the variety of colorful fruits and vegetables.

Ingredients:
2 cups diced fresh pineapple
1 cup diced red pepper
1/2 cup chopped cilantro
1/4 cup finely chopped red onion
3 tablespoons finely chopped jalapeño pepper stemmed and seeded
1 clove garlic minced
Juice of 1 large lime
Salt to taste

Directions:
In a medium bowl, combine pineapple, red pepper, cilantro, red onion, jalapeno, garlic, and lime juice.
Stir until well combined.
Season with salt, to taste. Serve at room temperature or chilled.
