Recipe: Cilantro Mushroom

Ingredients-

500 gms Halved Mushrooms
2 tbsp Oil
5-6 pcs Green Cardamoms
1-pc Black Cardamom
5-6 pcs Cloves
1-pc Bay leaf
1-inch Cinnamon stick
1/2 cup(150gms) Boiled Onion paste (made with 3 medium-sized onions)
1 Tbsp Ginger Garlic paste
2-pcs Green Chilly chopped
3tbsp Cashew nut paste (made out of 70gm Cashew)
1/2 cup Yoghurt Whisked
1-cup Coriander leaves (Cilantro)
1-tsp Kashmiri Red Chili powder
1-tsp Coriander powder
1-tsp Cumin powder
1-tsp Salt or according to taste

Method-

a) Blanch 500gms Mushrooms in hot water for 2 minutes, drain and set aside
b) Heat two tablespoon oil in a non-stick pan
c) Add- green cardamom pods, cloves, cinnamon stick, bay leaf, black cardamom and sauté over medium heat until it generates fragrance
d) Add- onion paste and sauté for 2-3 minutes
e) Now add- ginger garlic paste and continue to sauté until the oil surfaces
f) Add- Kashmiri red chilli powder, coriander powder, cumin powder, chopped green chillies and stir for 30 seconds
g) Add- whisked yoghurt and salt, mix well and reduce the heat and let it simmer until the fat content rises to the surface
h) Add- cashew nut paste and let it simmer for 2-3 minutes
i) Add mushrooms and sauté for 3-4 minutes
j) Finally add, finely chopped coriander (cilantro) leaves and let it simmer for 2-3 minutes

Your Cilantro Mushrooms are ready to serve, add a sprinkle of coriander and enjoy
