Rich in vitamin C, iron and calcium, amlas, truly are a gift from nature to us. Amlas being in season now make this a great time to prepare and preserve this juice concentrate and pickle.

Amla recipes usually pair this super fruit with jaggery which many sugar concious folks avoid in their diet. The amla pickle is based on the Karnataka hudi upinakayi style of pickles and is a delicious alternative that anyone can relish with their meal to have their share of amla in a tasty and sugar-free way.

The juice concentrate helps build immunity and also at warding off colds. This juice is best had with hot water. It also helps relieve acidity and improves digestion.

Ingredients:
For the pickle
– 12 amla/gooseberries
– 2 tbsp salt
– 3 tbsp jeera/cumin
– 1 and 1/2 tbsp rai/mustard
– 1 tbsp methi/ fenugreek seeds
– 1 tbsp oil
– 1 tsp citric acid or 1 tbsp amchur (dry mango powder)
– 2 tbsp kashmiri red chilli powder
– 1 tbsp salt for masala

For the juice concentrate:
– cores of the 12 amlas used for the pickle
– 3 whole amlas/ gooseberries
– 1 cup jaggery/gud
– 1/2 inch ginger chopped
– 1/2 tsp pepper
– 1 tbsp honey
– 1/2 tsp salt
