Sweet Potato Rosti Brunch

Sweet Potato Rosti – whether it be with wilted greens & an egg or with humus & avocado, is one of my favourite weekend brunch choices!
Full of skin and health-boosting beta carotene, vitamin E and monounsaturated oils. This brunch dish takes very little time to make but tastes delicious!
Easy swaps – if you don’t eat eggs I suggests an easy swap. If you’re following low FODMAP’s eating then the rosti (made with the spring onion green tops) with an egg, avocado & wilted greens is great; If following Low Histamine eating then the rosti with an egg & wilted greens (all except spinach) is great.
