Little Millet-Sabudana Upavas Idli

Little millets are one of the small millets called Kutki in Hindi, and Same in Kannada and Samai in Tamil and Sava in Marati. It contains Magnesium which improves heart health, Vitamin B3 in this millet  helps lower cholesterol.  It is also a good  source of phosphorus which helps with body metabolism, body tissue repair and helps to produce energy.  Due to the fact that it is a powerhouse of health benefits ,and people being health conscious,  this millet has gained importance these days.    This millet is also considered to be an UPAVAS millet. I would like to share the recipe of small millet and sabudana instant idli.
INGREDIENTS OF THE DISH:
1. Little millet – 1/2 cup
2. Sabudana pearls – 1/8 cup
3. Rock salt – 1/2 tsp
4. Yoghurt – 1/2 cup
INGREDIENTS OF SEASONING:
1. Desi ghee – 3 tsp
2. Cumin seeds – 1 tsp
3. Cashew pieces- a few
4. Green chili – 1
5. Ginger chopped – 1/2 tsp
6. Curry leaves – a few
7. Turmeric powder – a pinch
8 . Fresh coconut – 2 tsp
9. Fresh cooking soda- 2 pinches
PROCEDURE: Wash and rinse little millet a couple of times and spread it on a cloth to dry.  When dried after 2 hours transfer to blender and powder medium coarse.  Transfer sabudana pearls to the blender and powder medium coarse.  Transfer both the powders to a bowl. Add rock salt, curds and mix till combined well. Place a small spatula with 3 tsp cooking oil in it on low flame.  When hot add cumin seeds, cashew pieces, green chili chopped, ginger chopped and curry leaves and finally switch of the flame and add  turmeric powder and mix and add this to the millet-sabudana mix in the bowl.  Mix till combined well.  Add fresh coconut and also fresh cooking soda and mix till combined well.  Add water adjust consistency and just get to the consistency of rava idli batter as shown in  the video.  Grease the idli mould and fill in the ready batter and steam in the steamer for about 12-15 minutes. Soft, yummy upavas idli ready to relish for sankashti as well. 
 Yields: 8 idli in this measurement.
