Raspberry Coconut Chocolate – SUPPORT your Immune System!

We can even strengthen our immune systems by eating chocolate! Seriously? Yes!

Raspberries (including frozen raspberries) are rich in antioxidants and fibre, and cocoa/raw cacao (whichever you have to hand, I used cocoa powder in today’s recipe) is rich in flavanols, which are responsible for chocolate’s anti-inflammatory effects.

3/4 cup frozen raspberries
1/3 cup (40g) dessicated/shredded coconut
1/3 cup (75g) coconut oil
90g salted butter
2-3 tbs maple syrup
2-3 tbs cocoa powder or raw cacao powder

-Line a plate with baking paper
– Arrange the raspberries on the plate
– Scatter the coconut on top of the raspberries
-Melt the coconut oil and butter in a pan
– Add in the cooca/raw cacao powder, and stir
– Pour over the raspberries
-Put in freezer for half hour
-Remove from freezer, and cut into pieces

And, that’s how you eat well to excel!
