Ingredients for Quinoa stuffed baked tomatoes

4 medium sized tomatoes
1/2 cup quinoa
2 tbsp chopped ginger
Handful chopped coriander or cilantro
1/2 cup chopped cottage cheese
Salt to taste
1 tsp black pepper powder
1 tsp coriander powder
1/2 tsp 5 spice powder( or you can use Garam masala)
Juice of half lemon

PS- How to cook quinoa
Take 1/2 cup of thoroughly washed quinoa and 1/2 cup water. Pressure cook it . Turn off the heat after 1 whistle. Keep it aside for few minutes.
