While vitamin C frequently gets discussed with immune health (and for good reason!), it plays many additional important roles in the body. In this video, our nutritionist Kendra Whitmire discusses all the reasons you want to ensure you have sufficient dietary intake of this vitamin as well as the foods that contain it. Spoiler alert: oranges are not actually the food with the highest vitamin C content.
The quick rundown: vitamin C’s primary role is to act as an antioxidant. As such, it is involved in many key body processes as well as mitigating excessive oxidative stress, which can cause damage and increased risk of disease. It’s also involved in the synthesis of collagen, carnitine, neurotransmitters, steroid hormones, and more. It has an important relationship with some other key nutrients, namely iron, copper, and vitamin E.
